Gulf County BBQ

“Smoked mullet is the original Florida BBQ,” says hard-core adventurer and foodie, Matt Godwin. “You can fish for mullet almost year round – late fall into winter is the best time. Out in the Bay you can catch them all the time. Cast netting is a Florida thing. A rite of passage. Very “forgotten coast.” You can just drive down the beach before the sun comes up and look for a swirl. Watch for them to come up to the top of the water. If you look at the water, it’s a bigger swirl than bait. You can see the tops of their heads and their backs. I smoke mine with hickory but always brine them for 24 hours and put a secret rub on them.”
